Alu Karela Fry ( Potato Bittergourd Fry) is the perfect accompaniments to your meal time. I always look out for perfect green and tender Bittergourd whenever I go to vegetable shopping. This preparation will be a hit with karela hater’s too.
Recipe of Alu Karela Fry

Serves : 4
Karela/ Bittergourd – 1 medium ( clean the karela and cut in thin roundels)
Potato – 1 medium ( clean the potato, remove the skin and cut in thin roundels)
Mustard Oil – 3 tbsp
Turmeric powder – 1 tsp
Chilli Powder – 1 tsp
Salt to taste
Take a deep bottomed pan/ non stick pan. Pour oil in it and heat the oil till it start to smoke.
Add the karela potato, salt, turmeric powder and chilli powder. Mix well. Fry in a low to medium heat. Continue to fry till the karela and potato turns to a slight golden brown colour.
Switch off the heat and serve hot or at room temperature with steamed rice and dal
