Alu Tori Posto ( Potato and Ridge Gourd in Poppy seeds masala)

Alu Tori /Alu Turaii/ Alu Tori / Alu Jahni Posto is one of  the most loved curry. It’s easy to prepare and goes well with some rice and dal. Follow this recipe and indulge in some comfort food with this curry.

Recipe of Alu Posto ( Potato and Ridge Gourd in Poppy seeds masala)

Ingredients:

Potato – 1 small ( remove the skin and cut in small cubes)

Tori/Turaii/Tori/Jahni – 1 Big ( remove the outer ridged skin and chop the inner spongy part with soft seeds into small cubes)

Onion – 1 small ( chopped in small cube size)

Green Chilli – 1

Poppy Seeds – 2 tbsp

Garlic cloves – 4 to 5

Cumin seeds – a pinch

Red Chilli Powder – 1 tsp

Turmeric powder – a pinch (optional)

Salt to taste ( Use less salt to enhance the sweetness of turai)

Mustard Oil – 3 tbsp

Water as required

Chopped Coriander leaves (optional for garnishing)

Method:

Take the poppy seeds in a bowl and add 2 tbsp of water. Keep it aside.

Then take a deep bottomed pan. Heat the pan. Put mustard oil and wait till the oil starts smoking. Then put the zeera and wait till it stops crackling. Then put the alu, turai, onion,salt, turmeric powder and chilli powder and mix well. Then cover the pan for 3 to 4 minutes. Then remove the cover and fry in a medium heat till the excess water coming out from the turai evaporates completely.

In the meanwhile remove the excess water from the poppy seeds and reserve it. Grind the wet poppy seeds along with the green chilli and garlic. Use a tsp of the reserved water to the mixture while grinding to prepare a smooth poppy seeds paste.

Add the prepared poppy seeds paste to the already sauted alu turai. Mix well. Check the salt in the curry. Add a little salt if needed. Continue to cook in a medium heat till the alu and turai got well coated with the poppy seeds masala paste. Check the consistency of the curry. Switch off the heat after you get your desired consistency of the curry. Garnish with fresh coriander leaves. Some like this curry completely dry and some a little thick. Try out both the versions and decide which consistency you like more.

Pair this Alu Tori Posto with some dal rice and you will get to taste this ultimate comfort dish.
