I know the answer. For all the Baigan lover’s it’s a treat actually. One can’t feel bored relishing the brinjal in different combination. Try this version of brinjal and start the love affair with the humble brinjal.
Recipe of Brinjal in Peanut and Garlic
One big sized purple brinjal (bharta baigan) – chop into big sized cubes
Peanuts – 4 tbsp
White Sesame Seeds – 1 tbsp
Garlic – 6 to 7 cloves
Green Chilli – 1 (slit in half)
Whole Red Chilli – half a chilly
Cumin – tsp
Salt to taste
Turmeric – 1 tsp
Mustard Oil – 4 tbsp
Dry roast the peanuts, sesame seeds and red chilli . Grind for 3 to 4 sec after adding the garlic and salt into a coarse textured powder. Take care not to grind it into a smooth paste.
Take a deep bottomed kadhai/ non stick pan, pour mustard oil in it. Heat till the oil reaches the smoking point. Then add the cumin and wait till it stops crackling. Then add the brinjal cubes, salt and turmeric powder. Mix well and fry in high heat till the brinjals were completely cooked but yet to attain the final golden colour. Add the peanut and garlic powder , green chilli and lower the heat. Mix well and cook till each of the brinjals were well coated with the peanut and garlic powder. Remove from the pan and transfer it in a serving dish. Enjoy with hot steaming rice or chapati.
