Cauliflower is in season and I make a rule to enjoy making and eating cauliflower dish each single day . Prepare this restaurant style Cashew based cauliflower and fresh green peas curry at home within 30 minutes and you are set for your lunch or dinner.
Here is the easy and simple steps to prepare this curry.
Recipe of Cauliflower and fresh Green Peas Curry
Preparation Time :15 minutes
Cooking Time :15 minutes
Cauliflower florets – 3 cups (Clean and separate the florets approx 18 small pieces )
Fresh Green peas – 1/ 2 th cup (You can use the fresh green peas or the frozen one’s . Take care to remove the frozen one’s from the freezer before 20 minutes of cooking and put them into warm water)
Tomato – 1 small ( clean and chop the tomato)
Whole Cashews – 6 to 7 numbers ( You can also use broken cashews)
Onion – 1 big ( Finely chopped)
Ginger – 1 tsp
Garlic cloves – 7 to 8
Whole Coriander – 1 tbsp
Garam masala Powder – 1 tsp
Red chilli powder – 1 tsp
Turmeric powder – 2 tsp
Salt to taste
Refine Oil – 3 tbsp
Water – 2 cups
Fresh coriander leaves – 1 tbsp chopped
Take a grinder/mixer and prepare a paste of the tomato, ginger, cashew and coriander seeds .( Note: First dry grind the cashew, coriander seeds then add the tomato, ginger and garlic and prepare a smooth paste)
Take a deep bottomed pan and one tbsp of oil.
Then add the cauliflower florets , salt and one tsp of turmeric powder.
Mix well and saute at a high flame till the cauliflowers are half done.Take care not to over fry them and remove from the fire when they still have some crunch to them.
Then in the same pan add the rest 2 tbsp of oil and heat the oil.
Then put finely chopped onions and keep frying till the onions turns translucent and attain a golden color. Then add the already prepared tomato cashew paste, red chilli powder, turmeric powder and salt. You can add a little water to this mix during cooking this masala. Continue to stir till the raw smell of ginger and garlic goes away.
Then add the half fried cauliflowers and mix well to coat each cauliflower florets in masala. Add the fresh green peas and water. Then mix again and keep covered and simmer for 5-7 minutes till done.
Finish with a sprinkle of garam masala and chopped coriander leaves.Pair this curry with some steamed rice and dal or with some chapati and salads and enjoy this with your loved one’s.
