Brinjal – 1 no. Medium sized Cut in thick squares size
Fresh Methi leaves – 4 cups Clean and chopped
Tomato – 4 nos. (small) Cut in small pieces
Onion – 2 nos. (small) Chopped finely
Garlic – 5 cloves Chopped finely
Cumin (Zeera) – 1 tsp
Panch Phoron – 1 tsp ( A whole spice mix of fenugreek seed, nigella seed, carom seed, black mustard seed and fennel seed in equal parts)
Salt to taste
Turmeric powder – a pinch
Red chilli powder – a pinch
Vadiyan/ Wadiyan/ Vadi (Urad dal vadi) – 5-6 pieces
Mustard oil – 2 tbsp
Take a pan and heat 1 tbsp mustard oil in it. Fry the dal vadi and remove them from oil and keep aside. Add the cumin in the same oil . Wait till the cumin stops crackling. Then add the brinjal , salt, turmeric powder and chilli powder. Fry for some time in high heat. Then add the chopped methi leaves and chopped tomatoes. Saute till the methi leaves are nearly done.
Then remove the sauted brinjal and methi leaves from the pan and keep aside.
The second Tadka –
In the same pan put 1 tbsp of oil . Add the panch phoron and wait till they stops crackling. Add the chopped onion and garlic. Saute a little then add the brinjal and methi leaves again in the same pan. Saute till the onions and garlics mix well.
Finish off with adding the vadiyan and remove from fire.
Serve with chapati or rice.
