Exclusive Masterclass​ by Sudhir Nair & Michael Swamy at Fairfield by Marriott, ORR

Walk through God’s own country-Kerala with executive Chef of Fairfield by Marriott Bengaluru Outer Ring Road & Limca book record holder Sudhir Nair & MasterChef Michael Swamy where they showcased the best of Land of Spice.
It’s all about recreating the age old traditional receipes which their grandparents & parents used to prepare at home during festivities. Taste, Health & quick cooking using readily available ingredients were the highlights of the Class.

Parippu Pradhaman, Curry-encrusted Lamb & Akki Roti were the recipe of the day.

After settling in to our assigned seating, we were served with refreshing coconut water topped with fresh cut fruits.

Recipe by Chef Sudhir Nair – Executive Chef, Fairfield by Marriott Bengaluru Outer Ring Road
Kerala preparation: Parripu Pradhaman – A traditional dessert of Kerala, made with lentils, jaggery and coconut cream scented with cardamom and clove
Yellow moong lentil – 200 gms
Ghee – 100 gms
Cardamom – 03 nos
Water – 2 liters
Salt – 05 gms
Fresh coconut- 4 nos
Dark Jaggery – 750 gms
Ghee – 100 gms
Clove – 02 nos
Chopped Dry coconut – 100 gms
Raisins – 50 gms
Cashewnuts – 50 gms
1. Sauté the lentils in ghee till it gets a light brown hue and a smoky smell
2. Cool it and wash the lentils in ample water.
3. Boil lentils in water with the salt and cardamom pods.
4. Melt the jaggery and strain. Grate the coconuts.
5. Make 03 batches of coconut milk/cream by adding hot water and squeezing the coconut flesh.
6. When the lentil is cooked add the melted Jaggery and coconut milk.
7. Do not boil the mixture; just keep on a gentle simmer till it blends well.
8. Heat the ghee for tempering, add the listed ingredients and temper the pradhaman
Best had warm on a banana leaf.

Bengaluru Outer Ring Road
Kerala preparation: Curry-encrusted Lamb
1 kg leg of lamb, whole (cleaned & trimmed)
For marinade
1 large onion, roughly sliced
1 cup coconut milk
2 inch piece of fresh ginger
1 large green chilli
4 garlic cloves
Salt to taste
For spice crust
1 teaspoon black peppercorns
1½ teaspoons coriander seeds
1 teaspoon mustard seeds
1 large sprig fresh curry leaves
2 teaspoons grated dry coconut
½ teaspoon turmeric powder
4 cups vegetable stock
To serve
Sticky rice
Microgreens/fresh coriander

1. Preheat oven to 150˚C.
2. Combine all ingredients required for the marinade in a blender or mixer and blend to a smooth
3. Score the leg of lamb and apply the marinade. Rub the marinade into the lamb properly. Cover
and set aside for some time.
4. While the lamb is marinating, prepare the spice crust.
5. Dry roast the pepper, coriander seeds, mustard seeds, curry leaves and dry coconut separately
for a few seconds each till they are fragrant.
6. Combine the roasted spices with turmeric in a blender and blend to a coarse powder.
7. Encrust the marinated lamb with the spice blend and place on a baking tray lined with foil.
Sprinkle tray liberally with stock, cover with another piece of foil and roast for 1 hour 20 minutes.
8. Slice the lamb and serve with sticky rice.
(NOTE: The pan juices could be made into a sauce. Please do keep 1 cup coconut milk or red wine on
standby for the same)

Bangalore based preparation: Akki Roti – Traditional rice bread from Karnataka popularly had for breakfast or lunch
For Dough:
Rice flour – 100 gms
Chopped onions – 30 gms
Chopped green chili – to taste
Chopped fresh dill leaves – 10 gms
Grated ginger – 10 gms
Grated coconut – 20 gms
Cumin seeds – 5 gms
Salt to taste
Oil -20 ml
Ghee/white butter to smear
Banana leaf- 01 no
1. Add salt and cumin to the rice flour
2. Knead the flour with hot water until soft.
3. Add rest of the ingredients for the dough and mix well.
4. Make small balls of the dough, cover with a damp cloth and rest.
5. Apply some melted ghee on the banana leaf and press the ball into a flat round shape.
6. Cook on a hot griddle until cooked.
Best served with a spicy ginger or coconut chutney.

After the masterclass, all the invitees had a chance to taste the dish prepared by both the chef’s & treated to high-tea.

Limca book record holder, Chef Sudhir Nair, is currently the Executive Chef at Courtyard by Marriott Bengaluru Outer Ring Road and Fairfield by Marriott Bengaluru Outer Ring Road. With over 17 years of expertise, the 37 year old culinary maestro has travelled across the globe to learn the different nuances of varied cuisines. He prefers cooking International cuisines but has an excellent repertoire of different schools of Indian food as well. He also rose up the culinary rung to become an Executive Chef at a young age of 31.
Throughout his journey in the culinary industry, he has always strived to introduce novel concepts and out of the box ideas in the kitchen. During his previous stint, Chef Sudhir has played an instrumental role in opening and revamping key restaurants in the ITC group of Hotels.
With International Cuisine being his area of expertise, he opened up the grand 340 cover ala carte Italian and Asian restaurant ‘Social House’ in Dubai at the Dubai Mall. Further, introducing and successfully running the concept of sky lounge at ‘Avasa’ added a feather to his cap.
A go getter by nature, Chef Sudhir’s main interest lies in in unearthing forgotten cuisines from the past. He is a firm believer of organic food and is happy to experiment with local produce. His philosophy is as quoted by Carl Sagan “You have to know the past to understand the present”.

The Master Class ensured that the invitees not only perfected some healthy culinary tricks but also took home some secrets from the star chefs.
