Presenting Green chilly Ambula (Salted Dried raw mango) Besara
Recipe of Chilly ambula Besara (A delicacy of Odisha)
Green chilly- 2 cups(Cut into very small pieces) (You can take red chilly too or a mix of both)
Ambula(Salted Dried raw mango)- 6 pieces
Onions- 1 cup(Cut into very small pieces)
Garlics- 1/4th cup(Cut into very small pieces)
Prepare mustard paste by grinding mustard with a little water to a very smooth paste
Salt-1 tsp(To taste)
Turmeric- 1 pinch
Mustard oil- 1/2 cup
Method- In a bowl put the green chilly’s, ambula,onions,garlics,salt, turmeric and mustard paste. In a kadhai pour the mustard oil, Heat it. Then add the content of the bowl into the oil.Mix well.Add one cup water. Keep it covered. Lower the heat. Keep checking in between.Keep stirring in between till all the chillies are cooked and the mixture becomes completly dry like how a pickle looks.
When completly comes to normal temperature, store in a glass jar and keep it inside refrigerator.
