Appe ( Paddu or Paniyaram) is a popular South Indian Snack which is generally prepared with fermented rice or mixed pulses. These Rava (Rawa or Semolina) Appe are the instant version and is very easy to prepare too. These appe are made in Paniyaram Pan which have mould’s in it to pour the batter. One can use the nonstick or iron one’s. To flip the appe , one can use the wooden pointed stick or a small spoon. My twist to these popular snack’s are to use some healthy fillings. So instead of using regular refined sugar which is mostly unhealthy , I opted for Lyva’s Organic Coconut Sugar (Unrefined Organic Granulated Pure Coconut Flower Blossom Nectar).

Rava/Rawa/ Semolina – 1 cup
Curd – 1 cup
Water – 1/2 cup
Salt – a pinch
Baking Soda / Eno/ Fruit salt – a pinch
Whole Cashew and raisin – 2 tbsp each
Organic Coconut Sugar – 1 tbsp
White Sesame Seeds – 1 tsp
Ghee – 2 tbsp

Take a deep bottomed bowl. Pour rava, curd,water and salt. Mix well till you get batter of pouring consistency. Keep the batter aside for 5 to 10 minutes so that the rava is soaked for few minutes.
Take a pan and heat one tbsp of ghee in it. Chop one tbsp of cashews and saute in the ghee. Add raisin and slightly fry both till turns slightly golden in colour. Remove from pan and transfer the fried nuts in a small bowl. Add the coconut sugar. The filling is ready.
Take a Paniyaram Pan and heat it. Lower the heat and put few drops of ghee in each mould’s. Add few sesame seeds and one cashew in each mould’s.
In the prepared batter , add baking soda or eno and mix well. Pour one small spoon of batter in each mould. Add a tsp of filling in the center of the batter and pour one extra small spoon of batter so that the filling is completely covered. Cook each side for few minutes and flip carefully so that both sides are cooked completely.
Remove from the mould’s and serve with few fried cashews,raisins, toasted sesame seeds and sprinkle few pinches of coconut sugar. Enjoy while still hot. These dryfruit filled appe tastes good too if consumed after few hour’s of preparation.
