Prepare this stuffed rice sauted with butter and Italian seasoning and potato tomato masala with a hung curd dip .
Not to forget the grated cheese and basil for enhanced flavors.

1/2 cup of cooked rice( Preferably Basmati rice)
1 Capsicum ( Any color capsicum will do)
Any refine oil – 1 tsp
Butter – 1 tsp
Mixed Italian Seasoning – 1 tsp

Take a frying pan. Heat it. Add both the oil and butter. Add the cooked rice and mix well. Then add the rest ingredients and put off the flame. Remove the sauted rice from the pan and keep aside.
Take the capsicum and cut the top portion only. Remove the seeds and stuff with the prepared rice.

One boiled potato Mashed
One Capsicum ( any color capsicum will do)
Half a tomato finely chopped
1 tsp of Ginger Garlic paste
1 tsp of finely chopped onion
1 tbsp Oil
1 tsp of Turmeric powder
a pinch of chilli powder
Salt to taste
Take a pan , pour the oil and heat the pan. Add the onions and fry till onions turns a little golden brown in color. Then add the ginger garlic paste and the tomatoes. Add the salt, turmeric powder and chilli powder. Saute till raw smell of masala goes away. Then add the mashed potato and mix well. Remove from the pan when done.
Take the capsicum and cut the top portion only. Remove the seeds and stuff with the prepared potato tomato masala.
Hung Curd Dip
1 cup of curd
Salt to taste
A pinch of black pepper powder
Take a muslin cloth and spread over a tea or juice strainer. Carefully pour the curd into the center of the cloth and carefully tie the cloth so that curd is not leaking from any side. Leave the tied muslin cloth in the strainer for 3 to 4 hours or till all the water drains out.
Then open the muslin cloth and remove the lump of hung curd in a serving dish, sprinkle with salt and black pepper.

Take a deep bottomed pan and add one tsp of butter to it. Put the Rice stuffed capsicum and Potato tomato stuffed capsicum . In a medium flame cook all the parts of stuffed capsicums till you can see a slight charred effect on the capsicums.
Plating the Stuffed Capsicum Meal
Any Grated Cheese – 1 tbsp
Fresh Basil leaves – 2 to 3 for garnishing
Take the same serving dish in which you kept the hung curd, Then half slit each stuffed capsicum. Add any grated cheese over the rice stuffed capsicum. Garnish with fresh basil leaves and serve hot.
