Tomato Karela ( Bitter gourd in tomato) in my style
Karela – 2 nos.(Small) Cut in thin roundels
Tomato – 4 nos. (small) Cut in small pieces
Onion – 2 nos. (small) Cut in square shapes
Garlic – 5 cloves Chopped finely
Cumin (Zeera) – 1 tsp
Salt to taste
Turmeric powder – a pinch
Red chilli powder – a pinch
Freshly roasted Coriander and cumin (dhania zeera) powder – 1 tsp
Mustard oil – 1 tbsp
Take a pan and heat mustard oil in it. Add the cumin . Wait till the cumin stops crackling. Then add the Karela , salt, turmeric powder and chilli powder. Fry till the karela’s are nearly done and turns into a darker colour. Then add the onions and garlic. Then saute for some time. Then add the tomatoes.
Continue to stir till the tomatoes turns a little mushy.
Then finish off with adding the dhania zeera powder.
You can garnish with freshly chopped coriander leaves.
Note – In this dish the onions, garlic and tomatoes should not be over fried. Take care to retain a bit of bite in them.
